What a lovely time we had at the beach on Sunday! We were invited by some ICS friends to camp overnight at Pak Lap near Sai Kung but chose just to spend the afternoon and early evening there. The beach was secluded and quiet and had plenty of shade from trees...perfect for a family!

Emily made her famous Jaffa cakes. She scooped the orange pulp out of several oranges and filled them with chocolate cake batter.
The oranges were then wrapped in foil and placed directly into our camp fire.
After about 15 minutes they are ready to eat. Chocolate cake with a hint of orange...yum!

ReplyDeleteWe do a lot of camping and I was so excited about your JAffa cakes that I immediately emailed the idea/recipe to a bunch of family/close friends. One friend said she had done it and was going to try it with small pumpkins next time - yum!
ReplyDeleteLaura, if you try this recipe it is good to know that you can substitute Sprite for the egg and milk/water. Just pour it in until your batter is the right consistency. That saves you having to cart eggs and milk along on your camping trip.
